Sohan papadi Burfi Sugar Maida

Sohan papadi is a special type of Burfi made from besan or gram flour and sugar. It is very popular in North India, namely Punjab, Haryana, Uttar Pradesh, etc.

Sohan Padi is very sweet, yellow colored burfi, made of besan. It i fluffy and wafery in texture and a good sohan papdi will melt in your mouth and its taste will linger for a long time in your mouth. It is also called Patisa in Punjab and haryana and is a local delicacy.

Sohan Papdi has a very good shelf life, hence is an excellent item for exports. a number of commercial food producers have sohan papdi in their menus, the most prominent being haldirams. Sohan Papdi is also available in many countries such as UK, USA and Canada which have a sizable Indian population. It is a great dish to carry during a trip as it does not get spoilt easily.

To prepare sohan papdi the ingredients needed are gram flour- 1 1/2 cup, ghee -250 gms, maida or plain flour- 1 1/2 cup, 2 cups of sugar, little milk and half tsp of cardmom powder. Mix the flour and cook it over fire with the ghee. Heat till the flour is golden in color. make a thick sugar syrup and pour it into the flour. Mix thoroughly and keep on beating it till it turns into flaky texture. Next move it in a flat surface and press it gently. Cut it into squares and sprinkle some cardamom powder over it. Let it cool and serve.
