Halwa is very famous India and is even consumed in many other south asian as well as middle eastern countries with variations in recipes and names. Shira is similar to its south indian cousin called upma although upma is salty and spicy as opposed to shira, which is sweet. Shira or sooji halwa is similar to a pudding. It is made of sooji or semolina, ghee, and sugar. It is usually garnished with raisins, nuts and even fruits such as pineapple. The halwa can be consumed as a dessert or a snack. It makes a very good tea snack. It is light and has a very mild flavor. Although sugar can be added according to taste, Shira should not be very sweet as the mild flavor of sooji would fade away. For making shira, first roast the sooji or semolina with some ghee till they become golden in color. Now add water and sugar and cook till you get a gelatinous, pudding like consistency. Add the raisins and nuts. Serve hot.
