Ras malai Milk based

Ras malai is a sweet very popular in North and Western India. Rasmalai consists of yellow colored, flattened balls of cheese that are served in sweet condensed milk.

Rasmalai is similar to the popular Rasgulla, but it is richer with thick milky syrup. Like Rasgulla, Rasmalai too originated in Orissa although K.C. Das of Bengal is credited with popularizing it. Nowadays, Rasmalai can be found in almost all the sweetmeat shops in North India. It is a well known delicacy and relished by people of all ages.

Rasmalai can be prepared from cottage cheese or paneer from a liter milk, 1 liter whole milk, 4cups water, 2 cups of sugar, 1 tbsp cardamom powder and almonds.

Make a sugar syrup by boiling 1 cup of sugar in 4 cups of water. Make the cheese from a liter of milk or buy the equivalent amount from the market. Knead it well till it gets a smooth texture. Now make equal sized balls of the paneer and flatten them into cookie shapes. Boil the sugar syrup and drop the balls of cheese after simmering down the flame. Let them cook for 8 to 10 mins and then remove from heat. Mix sugar to the 1 liter milk and boil it over medium fire till it is reduced to 1/4 of original vol. Mix the cardamom powder in it and keep aside. Drain the cheese disks in water and drop them into the condensed milk. Chill the rasmalai and garnish with sliced almonds.
