Pithe Milk based

Pithe is a dessert item from the eastern states of West Bengal and Orissa. It is also eaten in Bangladesh. Pithes are like pan cakes made of rice flour, sugar and jaggery. The are served dipped in a sweet syrup.

There are many kinds of pithas. Some of the most popular are gokul pitha, muger puli, bhapa pitha, puli pitha, pati pitha, chitai pitha, ranga alur, dudh puli, kuli pitha and many more. Traditionally pitha is made to celebrate the completion of harvesting of the crop. Pitha is also closely associated with the bengali festival of poush parbon.

The following recipe is of ranga aloor pitha. It is made of sweet potatoes. For making the dish, u will require 500 gms sweet potato, 100 gm wheat four, 1 kilogm sugar, 1 grated fresh coconut, 500 gm ghee and half tsp of cardamom powder.

How to Make Easy Pithe:

  1. Boil and peel the sweet potatoes, peel and mash them with the wheat flour.
  2. Make a dough out of the mix.
  3. Mix the grated coconut with the milk, add sugar and cook till the mixture becomes dry.
  4. Make a sugar syrup with a thick consistency.
  5. Divide the dough into a number of small balls and roll each one into a small disk.
  6. Take each disk and add some filling in between.
  7. Close the filling by joining the edges of the disk.
  8. Deep fry in oil till the get a golden brown color and and dip them in the sugar syrup and let them soak in it for an hour or two.
  9. The pihe are ready.
