The other ingredients can be rice, semolina, makhana, various lentils like moong, coconut, etc. Kheer is mildly sweet but the sweetness can vary from place to place. Payasa or paayasam is the south indian variety of kheer. Payasa is basically Kannada(language very common in Karnataka) version payasam. Traditionally, jaggery is used instead of sugar. Muga Payasa or moong payasa is the version of kheer where moong bean is used to prepare the dish. The basic way of preparation is similar to paayasam or rice kheer. Here, instead of rice, moong is used. Moreover, jaggery is used as sweetener instead of sugar.
