Paniyaram

Paniyaram is a south indian dish, more popular as a evening snack than as a sweet. But is can be prepared as a sweet dish too. The sweet ones are doughnut shaped with a mildly sweet taste.

Paniyaram is made from a batter of rice and lentils such as urad dal or black lentils. It is prepared using a mould similar to that of idli. Preparation of pal paniyaram is quite easy. The ingredients need are 1 cup each of urad dal and rice, 1 coconut, 3 cups sugar, cooking oil and 2-3 pods of cardamom. Let the rice and lentil soak in water for 3 to 4 hours. Grind them into a fine paste to make the batter. Add a little salt to it. Collect the coconut milk in a vessel and add sugar and cardamom. Stir well to dissolve the sugar. Heat some oil in a frying pan and drop a spoonful of the batter into it. You can use a mould to get the doughnut shape. Remove the balls thus formed and drop them into the coconut milk syrup. Let it soak for some time. Pal paniyaram is ready to serve.
