Mysore pak Burfi Besan (chick pea flour )

Mysore pak is a special type of Burfi, a specialty of the historic city of Mysore, in the southern state of Karnataka. Mysore Pak is made of besan or chickpea flour, ghee and sugar. It is very heavy on the stomach as generous amount of ghee is used to make it. But the result is a mouth watering, delicious sweet, that can be served as dessert as well as along with tea.

Mysore Pak is very famous in south india and is relished by people of all age groups. It is very commonly served in pujas and marriages. Mysore Pak easily is available in sweetmeat shops, all over south india and in many parts of north india too. The sweet is yellow colored and is either square or diamond shaped. It is very sweet and very rich in ghee.

To make Mysore Pak, the ingredients needed are 1 cup besan or chickpea flour, 2 cups ghee, 2 cup sugar and 2 cup water. Make a sugar syrup my boiling t with water. It should have a thick consistency.Now add 1 tbsp the besan to the syrup and keep stirring so that it is mixed evenly. Add 2 tsp of ghee and stir well. When the ghee had blended completely, add another 2 tsp of ghee and 1 tbsp of besan. Repeat the process till all the besan is consumed. Keep on cooking till the ghee starts leaving the edges. Now remove from heat and spread it evenly in a dish with 1 cm thickness. Press it so that the ghee comes to the surface but do not remove it. Let it cool for 10 min and cut into equal blocks. Let it cool for some more time and serve.
