Mihidana is derived from the bengali words mihi and dana. Mihi means fine in bengali and dana means grains. So the meaning of the dish comes out to be fine grains. As apparent from the name, mihidana are sweet tasting small grains made from gram flour. Mihidana making process involves making a batter of gram flour or besan by mixing it with water. The consistency should be thin so that it can flow through the sieve. The batter is transferred into a sieve. The sieve has small holes and is made in such a manner that the batter falls drop by drop. These are dropped into a deep frying pan with oil boiling in it. The tiny balls of besan are allowed to fry till they are dark yellow. Next they are moved from the pan and dipped into a sugar syrup and are allowed to soak the liquid. After a few minutes, they are move from the liquid and over a large plate. It can be served as it is or made in the form of laddu. A handful of grains are taken at a time and made into round balls.
