Malpoa is a specialty of Eastern Indian states such as West Bengal. It is made of flour, milk , sugar and ghee. Malpoa is well known in Bengal as a dessert item. It is available in almost all sweetmeat shops. They are prepared during the festivals of holi, diwali, durga pooja, etc. Malpoa's can be prepared at home very easily. The only thing that need to be taken care of is the consistency of the syrup. It should not be too thin as the malpoas would fall apart. Ingredients for making malpoa are half cup flour, 1 cup parboiled ground rice, 1 1/2 cup sugar, 1 cup water, 1 tsp rosewater, 1 egg, 3 tbsp ghee, 2 1/2 tsp baking powder, 1/2 tsp salt. Prepare the sugar syrup by boiling it with water. Add rose water and set aside. In a plate, mix the flour, ground rice, baking powder, sugar and salt thoroughly. Add the mix to a mixture of milk, beaten egg and ghee. Stir well. Now move a frying pan over medium heat. Pour a tablespoon of the batter onto the pan and make a circle with the back of a spoon. flip it and fry the back side too. When it turns brown, remove it from the pan and dip in the sugar syrup. Repeat the same process with the whole of the batter. Let the malpoas soak in the sugar syrup. To serve, remove the malpoas from the syrup and sprinkle some chopped nuts for garnishing.
