Ledikeni Milk based

Ledikeni is a popular Begali sweet named after Lady Canning. The sweet was invented by the famous sweetmeat shop owner Bhim Nag of Calcutta, to celebrate the birthday of  Lady Canning.

Ledikeni is similar to Gulab Jamun but its shape is quite different from it. It is very sweet and is made of semolina, khoya, milk, ghee and sugar syrup. It is very widely eaten in Bengal as well as rest of India. Calcutta boasts of a number of sweetmeat shops specializing in the dish.

Ingredients for making ladykeni are : 1 kg paneer, cooking oil for deep frying, 50 gm sooji or semolina, 25 gm khoya, 1 kg sugar, 2 tsp ghee.

Mix the paneer, sooji and ghee and knead it into a dough. Make a sugar syrup by boiling sugar and water. Make balls of the dough with some khoya in the middle and deep fry them till they are brown in color. Next move them into the syrup and let them soak in it for a day. Ledikeni is ready to serve.
