Kheer Milk based Milk Rice Noodles

Kheer is a very commonly eaten dessert item in India as well as Pakistan. It is often made during the festivals. It is made of milk, rice or vermicelli, sugar and nuts and raisins. Kheer is probably the most popular dessert item in the Indian cuisine.

Kheer may be made from rice cooked in milk or using seviyaan or vermicelli. Seviyaan is associated with the muslim festival of Id Ul-Fitr. Rice kheer is linked to many hindu festivals and temples, where it is served to the devotees as prashaad. In fact the rice kheer is believed to be originated around two thousand years ago in the temple city of Puri, famous for the Jagannath temple. It is cooked in the temple even today. In south india, a cousin of kheer called the payasam is a favourite dessert item. Payasam is also associated with the south indian culture and religion as is often served in the temples as well as feasts and weddings.

Most commonly eaten kheer in India is the rice kheer. To prepare rice kheer, you will require, 2 liter whole milk, 1 cup rice(preferably basmati), 350 gms of condensed milk, 1 cup sugar, 1 tsp cardamom powder, almonds and raisins.

Heat the milk and add the condensed milk. Let it boil and the rice into it. On medium heat, let the kheer cook till its volume is half. Add the nuts, cardamom and raisins to it and stir well. Let it cook for a few minutes and remove from heat. You can serve it hot or chilled.
