The halwa is made from white pumpkins and is very sweet to taste. It is a delicious dish and is very often served as prasad in the temples.Kaashi halwa can be
served as a dessert, an evening snack, or a dish to
serve your visiting guests. It tastes great in
combination with other items such as ice cream, rabdi,
kulfi, etc. Kashi halwa is available in sweetmeat
shops in North India specially in the state of Uttar
Pradesh, where it is a known delicacy. It is very
commonly served in marriages along with rabdi. 1 kg ash gourd, 2 cups each of ghee and sugar, a few nuts for garnishing. Grate the ash guard by removing the skin and the seeds. Now, cook it in a pan till all its moisture is gone. Next, add the sugar and keep on cooking. When the color of the halwa becomes golden, add the ghee. Keep stirring and cooking the halwa till the ghee starts to separate from the semi-solid mass. Now remove it from the heat and let it cool. Sprinkle some cashew nuts over the halwa for garnishing. Serve it hot or cold either simply or in combination with ice cream or rabdi.
