Kalo jam Milk based

Kalo jam is predominantly a bengali sweet, a delicacy of west bengal and bangladesh. It is a rust colored sweetmeat made from flour, sugar, milk and ghee. It is similar to gulab jamun. Although a bengali dish, Kalo Jam is available in almost all sweetmeat shops all over India.

Kalo Jam has a huge popularity in Bengal. Rasgolla and Kalo Jam are the two most famous bengali sweets. The dish itself is very sweet in taste, much to the liking of the Bengali taste. It is similar to gulab jamun, although it is not served with sugar syrup. The sweet is part of the bengali culture and is very commonly served during festivals and puja.

Although Kalo Jam is very widely available in sweetmeat shops in India, it can be prepared at home too. All you need is 1 ltr whole milk, 2 tbsp wheat flour, 50 gms milk powder, 1 cup ghee, 1 cup sugar or acc to taste and one lemon.

Now to make the cheese, boil the milk over fire and squeeze some lemon juice in it so that it stars curdling. Next remove the cheese and wash it thoroughly in running water. Now put it in a cheese cloth and let it hang overnight so as to remove all the whey from the cheese or paneer. Mix the flour and ghee with the cheese and knead it properly so that you get a dough. Make small balls and put some milk powder in the center of each ball. Take a deep frying pan and put the ghee in it. Let it heat and then gently put the cheese balls in it. Deep fry them till they are brown. Now make a sugar syrup by boiling 1 cup sugar with 21/2 cups of water and put all the cheese balls in it. Let them soak for 2 hours. Afterwards remove them and serve.
