sugar, ghee and cardamom. A specialty of the western state of
maharashtra, Kaju Katli also known as Kaju Burfi in many parts
of India is mildly sweet with a mellow flavor of cashew nuts.
Kaju Katli can be prepared using the following ingredients. 1/2 kg cashew nuts, 1 tbsp of ghee, 1/2 tsp of cardamom powder, 300 gms of sugar. Soak the cashews for 2 to 3 hours. Drain the water and then proceed to grind them into a smooth paste. Move the paste in a pan and add the sugar. Over medium fire, let the mixture cook slowly with constant stirring so that it doesn't stick to the base of the pan. Keep on cooking till the mix is reduced to a soft solid lump. Now add the cardamom powder and ghee, stir well and cook for a few more minutes. Now grease a plate with ghee and spread the mixture over it. Cut into diamond sized pieces and let it cool. You can apply silver foil over the katlis and serve.
