Jalebi is a speciality of North India particularly, Punjab although is very popular in other parts in India too, albeit in different forms such as emarti, jangiri, etc to name a few. Jalabi's are hot favourites among the masses during the monsoon season along with pakodas and samosas. They are made from a loose batter of flour which is fried into pretzel shape and then soaked in sugar syrup. It is generally served hot. It tastes fabulous with a steaming glass of hot milk on a cold rainy day. Ingredients needed for jalebi are 2 cups of flour or maida, 1/4 th tsp baking powder, 2 tbsp rice flour, 1 cup water, 2 tbsp yogurt, 1 tsp saffron powder, 3 cups sugar, some cardamom powder, oil and rose water. Make a smooth batter by mixing water with baking powder, flour, yogurt and rice flour and cardamom as well as saffron powder. Let it ferment for a couple of hours. Make some sugar syrup by boiling sugar with water. Add some cardamom for flavor. Next, deep fry the batter by pouring it gently into the oil and making hand movements so that the batter takes the shape of coils. Use up all the batter to make a number of coils. Keep on frying till they get a golden yellow color. Remove from oil and dip them in the syrup. Leave them there for a few minutes. Now take them out and serve hot. |
