Halbai Burfi Ground Wheat grains milk

Halbai is a burfi made from grounded wheat, milk and sugar. It is a specialty of Karnataka. Halbai is basically a combination of halwa and burfi. It taste like halwa but is served in the shape of a burfi.

Halbai is yet another Deepavali special dish. It is a bit difficult and tedious to prepare, but it taste great. It has a unique mildly sweet flavor and is very soft to eat. It is very popular in many parts of India. Mysore halbai, from the historical city of Mysore in Karnataka, is very famous throughout the country.

Traditionally, halbai is made from grounded wheat but rice is also used in many parts. To make the former one, you will need one cup of wheat flour, 2 cups coconut milk, 2 cups jaggery or according to taste, 1 cup ghee, 2 cups water and 1/4 tsp cardamom powder.

Let the wheat flour soak in water overnight. Remove the water and move the settled flour into a container. Take a frying pan heat the coconut milk as well as jaggery and stir well. Let the mix cook on low fire for 15 mins. Now add the ghee and flour to it and mix well. Keep it over fire for some time till you can make out the ghee leaving the mixture. Now pour the mix onto a plat vessel and spread it. Make sure to grease the vessel with ghee so that the mix does not stick to it. Now sprinkle come cashews over it and cut in to diamond shaped pieces. Let it cool down. Halbai is ready to be eaten.
