jaggery and rava. Dhondas is a part of the Malvani cuisine,
from the Konkan region of Maharashtra, Goa and parts of Karnataka. Dhondas is also called tavsalli, derived from the name Tava, which are cucumbers. To make a serving of Dhondas for four, you will require 1cup of cream of wheat or rice (rava), 2 cups of cucumber(grated), 1 cup of jaggery, 1/2 tsp cardamom powder, some cashews and grated cucumber for garnishing, salt and ghee. Move the rava in a pan and roast the rava over medium heat for 5 min with 2 tsp ghee. Add the cucumber, salt, jaggery, cardamom and cashews to the mixture of wheat and stir well so that all the ingredients are mixed properly. Let it stand for half an hour. Now apply a layer of ghee to the inside of a deep pan and pour the mix. Steam cook it for 10 min in a pressure cooker. When the cake is done, cut it into slices and sprinkle some grated coconut over it. Serve with tea or coffee. It can also be a great dessert.
