There are various types of barfi's having different flavors, colors, shapes and sizes. Each region of India has a special burfi. Barfi's are, by far, the most common item you can find in in a typical Indian sweetmeat shop. There are various kind of barfi's like plain khoya barfi, cashew barfi, badam barfi, pinni, pedas, kesar barfi, coconut barfi, dodha barfi, etc. Barfi can be made with many items as its flavoring agent. Every sweet shop has its own versions of barfi. Barfi's usually have a layer of edible silver foil over it to give it a tempting look. They are very closely associated with Indian festivals and the shops can be seen overflowing with a huge variety of them during the festivals of holi, deepavali, etc. They are also served as offering to deities in the temples where its called prashad. Barfi's come in various shapes such as square, diamond, circular or oblong, etc. Barfi is known as the Indian Cheese Cake by many foreigners owing to its resemblance to a cheese cake. One if the most popular and expensive form of barfi is the Kaaju Barfi or cashew barfi. To make kaaju barfi you'll need 500 gms of khoya(easily available in any sweet shop or dairy), 200gms cashew nuts, 350 gms of sugar, grounded cardamom and edible silver foil for presentation. Take the sugar and mix it with the grated khoya. Next move it over fire in a pan and stir regularly. As the sugar in the mixture liquefies, add the grounded cashews and cardamom. Still well and let the mixture have a uniform consistency. Now remove from heat and let it cool down. Cut it into desired shape and stick some silver foil over it. Tasty cashew burfi is ready.
