Badam Halwa is a special type of halwa or fudge, a very popular sweet made in almost all Indian cultures. Badam halwa is made of almonds, ghee, milk and of course sugar. It is considered a delicacy in India.

To make Badam Halwa you will need, one cup of almonds, 3 tablespoon of milk, three cups of water, saffron, 1 cup of sugar or acc. to taste, 3 to 5 tbsp of ghee, grounded cardamom.

Soak the almonds in luke warm water for a few hours and remove the outer cover. Now grind the almonds into a paste by adding a little milk. Make a sugar syrup of not too much viscosity and add it to to the paste. Put the mixture over medium heat and add ghee. Stir it well so that all the ingredients mix well enough. Add cardamon powder and saffron to the mixture. You can add raisins to it too. Keep cooking and continuously stirring the mixture till it becomes thick and shiny. Take it off the heat. You can serve it hot also or cool it down and roll it into laddo balls. Garnish with grated coconut.

Badam Halwa can be served as dessert after dinner or as a side dish with tea. Enjoy it on a rainy evening with tea or coffee.
