Abar khabo Milk based

Abar khabo is one of the most popular sweet dish of the Eastern State of West Bengal, probably second only to Rasagolla. Abar Khabo is bengali for "Once More". It is said that the dish was so much liked by the people that they always asked for a second helping, thus giving it the name.

Abar Khabo is available in almost any sweet meat shop in Bengal, as well as rest of India. It is a combination of the three sweet delicacies of Bengal, the rasagolla, sadesh and the mishti doi. It is quite difficult to prepare and a lot of skill and care goes into making the dish.

To make abar khabo you will need 1 kg of chhena, 150 grams mewa, 200 gms of sugar, 1 gm of saffron(kesar), raisins and pistachios.

Mix the chhena and sugar well and cook it over medium flame till you get a creamy texture. Now cool the mix and divide it into two equal parts. Take one part and mix it with the kesar and the raisins and pistachios. Now divide this into a number of equal balls. Divide the other part also into the same number of balls. Now take one ball of each part and press them against each other so that they stick onto each other. Grate the mewa and roll each ball over it. Abar khabo is ready to serve.
