Aamrakhnd Cream based Yoghurt

Aamrakhnd is a type of Shrikhand with the flavor of mango. Srikhand is a sweet dish made of creamy yogurt. Aamrakhand is also called Mango Srikhand and is a delicacy in the Western Indian states of Maharashtra and Gujrat.

Aamrakhand is very popular dish in Gujrat and almost all hotels and restaurants have it in their menus. It is served as a dessert. Its made of yogurt and looks like custurd. Its sweet and sour in taste and widely loved by children and adults alike. Its a common recipe of a typical Gujrati cuisine.

To make mango shrikhand or aamrakhand, you will require one cup of mango pulp, one cup yogurt, sugar according to taste, 1 cup sour cream, dry fruits such as cashews, pistachios and walnuts, saffron, one tsp finely grounded cardamom.

Mix a pinch of saffron powder in 3-4 tbsp of milk to make a saffron sauce. Main technique required to make aamrakhand or any shrikhand is to drain the water from the yogurt properly. This is done by tying the yogurt in a muslin cloth and then letting it to hang for 2 to 3 hours. The result is a creamy yogurt residue. Now mix it with the sour cream and mango pulp. Add sugar. Keep in mind not to add to much of it as the mango pulp itself is sweet. Next add the dry fruits and oyher spices mentioned above as well as the saffron sauce. Churn the mixture well so that all the ingredients are properly mixed. Now chill the Aamrakhand for a few hours and serve as dessert.
