Another type of vada commonly known Aama Vadai is made entirely of lentils. Vada is eaten throughout South India in many forms along with sambar, coconut chutney or rassam. In Maharashtra, vada-pav is a famous street snack, made of vada sandwitched between a pav with chutneys and pickles in it. Vada is also popular in other forms too all over India. Dahi vada, batata vada, paruppu vada, thairu vada, masala vada, rava vada and ulli vada being some of the most popular ones. Recipe for a typical south indoian vada sambhar is as follows. You need, 1/2 cup urad daal(black gram), 1/2 cup moong daal (split green gram), 1 finely chopped onion, 1 tsp ginger paste, finely chopped green chilies, salt to taste and 1/4 tsp baking soda. Wash and soak the urad and moong daals for 3-4 hours. Now grind them in a blender to make a paste. Add onions, ginger, green chilies, salt and baking powder and mix them well . Set the mixture aside for 5 minutes. Heat oil in a pan and deep fry a the mix in doughnut shaped rings till they are golden in color. Serve with coconut chutney and sambhar.
