Sev is the salty Indian snack that is can be eaten as it is or added in other Indian snacks such as Bhel puri, Sev puri etc. This snack is a popular tea snack in India.

Sev is made from chick pea flour which is mixed with spices and seasonings and kneaded into a dough. This dough is then pressed out from sev gathia or presses to make thin strands of dough which are then deep-fried. Though sev consists of fine and small strands, there are thicker versions too. Salt, spices and lime juice can be added to give sev a tangy flavor. Fine Sev is commonly used as an ingredient in other dishes, such as fillings for sev puris, bhel puris, chaat, etc.

To make sev you will need a Sev Gathia or sev press. This press oozes out the sev dough in small strands form directly into pan of oil to be deep fried.The ingredients needed are: 2 cups bengal gram flour, 2 tbsp oil, 1/3 teaspoon baking soda, 1/4 teaspoon. asafoetida, salt, cooking oil, press.

Mix all the above ingredients to make a dough. Grease your hands with some ghee or oil as well as inside the cylinder of press. Fill it with the dough. Heat the cooking oil in a large frying pan. Hold the press above the hot oil. Press the sev press so that dough strands flow into the hot oil. Move your hands in circular motion to make rings of sev. Cook for about a minute or two. Keep flipping the sev rings till they are yellowish brown. Sev is ready. Store it in an air tight container. Serve with tea of coffee.
