Potato chips

Potato chips are thin, salted, crisp slices of potatoes that are deep fried. Potato chips are one of the most popular snack items consumed in almost all the parts of India. They are manufactured not only on large scale by big firms, but also on cottage scale or at homes.

Potato chips originated in New England as a variation of the thick sliced french-fries. In 1853, American Indian George Crum was working as a chef at a resort in Saratoga Springs, New York called Moon Lake Lodge. At its restaurant menu were French-fried potatoes, which were thickly cut in the traditional French style. One day, a guest found Crum's French fries too thick and rejected the order. Crum cut thinner slices and fried the batch of fries, but these too were rejected. Irritated, Crum decided to make fun of the guest by making the fries too thin and crispy to be eaten with a fork. To his surprise, the guest was ecstatic over the paper-thin potatoes and other diners requested Crum's potato chips too, which became famous as Saratoga Chips. Soon they were sold throughout the New England area.

Many global brands such as Frito Lays and Pringles have a presence in India in the potato chips market. Other very popular brand is Uncle Chips, although Lay's is the market leader with a number of flavors in its kitty. Apart from these big firms, there is a big cottage industry too making potato wafers, which are available all over India.
