It is usually eaten for breakfast or as an evening snack or tea time snack. It is a delicious, wholesome and nutritious meal, just right to kick start a new day. The Maharashtrian pohe variety is a spicy dish. It is made of of flattened, processed rice called poha, roasted with chilies, onions, mustard seeds, cumin seeds and curry leaves. It can be eaten with a dab of lemon juice or coriander chutney. Pohe can prepared in minutes. All you need is 2 cups poha (flattened rice), 2 tbsps of cooking oil, 1 tsp mustard seeds, a few curry leaves(kadi patta), 2 green chilies, 1 chopped onion, 2 finely chopped potatoes, few peanuts, turmeric powder, lime juice, salt and chopped coriander for garnishing. Put the poha rice in a sieve and wash it. Move it into a bowl and fill with the bowl with water just enough to cover the poha. Heat the cooking oil in a frying pan and add the mustard seeds, curry leaves and green chillies. Fry till they stop spluttering. Fry the onion till its soft. Add the peanuts and potatoes. Cook for 2-3 minutes. Drain the poha completely of water and add it to the mix of potatoes and onion. Add the turmeric powder and stir well. Cook for one or two minutes then stop. Pour some lime juice over the poha. Add coriander chutney to it and garnish with coriander leaves.
