Dahipuri

Dahipuri is a very popular Indian snack, specially in North India. It is a type of chaat, which is a class of indian snacks that are made from curd, chutneys and other spicy ingredients. It is a variation of golgappa, its relatively more popular cousin, which is often offered in the same chaat stand.

The paani puri shell is broken on top and partially filled with the stuffing of mashed potatoes or chickpeas. Sweet tamarind chutney and spicy green chutney are poured into the shell on top of the stuffing. Finally, sweetened and beaten yogurt is poured over the shell and then it is garnished with sprinklings of crushed sev, chopped coriander leaves, amchur, chili powder, etc to give it a mouth watering taste and color. A piece of dahi puri is eaten whole, like the pani puri, so that the flavors of all the spices are savoured at the same time.

For preparing dahi puri at home, you will require 1/2 cup of chickpeas, 2 cups of yogurt, 1 teaspoon ginger paste, 1/2 teaspoon of red chili powder, 1/4 teaspoon each of ground cumin, ground coriander seeds, rock salt and ground black pepper, common salt , 1 large potato which is peeled, boiled and mashed, crispy puris, 1/4 cup each of green chutney, tamarind chutney, 1/2 cup of onion, 1/2 cup chopped cilantro leaves.

Boil the chickpeas in water for about 30 minutesl. In the yogurt mix the ginger paste, chili powder, cumin powder, coriander powder, rock salt or black salt, black pepper and sugar. Add salt to the mashed potatoes. Break each puri gently to create a tiny opening on the top. Put a little bit of potato in each puri and place a few garbanzo beans on top of the potato. Fill it with a spoon of spiced yogurt, green chutney and sweet and sour chutney on top of it. Garnish with the chopped onion, cilantro, and sev. Dahi puri is ready to serve.
