Dahi vada

Dahi vada, also called Dahi Bhalla is also a member of the chaat family of Indian Snacks. It is prepared by soaking vadas in thick yogurt topping it off with tamarind chutney and sev.

The vadas are first soaked in water for a couple of hours and then dipped in thick beaten yogurt. The dish is then garnished with mint leaves, black pepper powder, chaat masala, green chillis, tamarind chutney and grated carrots, cabbage and radish. Dahi vada is a popular evening snack and a must dish for marriages. It is an integral part of the menu of a chat shop. It can be served as a delicious starter or a cold appetizer. It is also very popular as a side dish for lunch or dinner.

For making dahi vada you will require one and half cups of urad daal ie black lentils, salt, 2 inch piece of ginger or 2 tsp of ginger paste, some green chillies, cooking oil for frying, thick fresh yogurt, red chili powder, 1 tbsp of chaat masala, 2 1/2 tsps cumin seeds, roasted and grounded, one and half tsp sugar and chopped coriander leaves.

Soak the urad daal overnight in a bowl of water. Grind it into a paste the next morning. Add the green chilies and ginger to this paste. Mix 2 cup of yogurt with 2 cups of water and salt.Mix some of the fresh yogurt with the red chili powder, chaat masala, cumin powder, salt and sugar. Mix it well. Next heat the oil for deep frying. Make donut shaped lumps of the paste and drop each one into the h oil. Deep fry till they are light golden. Now take them out, remove the excess oil and put these vadas immediately into the yogurt mix. Allow he vadas to soak for some time. Remove the vadas from the yogurt/water mix and press the water out from each one of them. Put all the vadas in a deep platter and pour the thick yogurt mix over them so that all the vadas are completely covered. Garnish with chopped coriander leaves. Serve chilleds. Garnish the dish with tamarind and nt-coriander chutney.
