Chole bhature

Chole bhature is a well known Indian delicacy said to have originated in Punjab. It is a combination of chole (spicy chick peas) and fried indian bread called bhature (made of maida flour and yogurt).

Chole - Bhature is one of the most popular dishes from Punjab. Chole is nothing but chick peas which are cooked in a spicy indian gravy. Though there are a great variety of spices used in chole, commercially produced, chole masala mix is very easily available in every grocery shop in India. Bhature is made of maida flour and deep fried in oil.

Traditionally,chole-batura is a breakfast item served along with sweet lassi. It is served with tamarind chutney, which is a mouth watering combination.

To make bhature(bread), you need, 2 cups maida flour, 1/2 tea spn baking powder, 1/2 cup yogurt, 1 tea spn sugar, oil, salt to taste. Mix the ingredients and make a smooth dough. Let it lie for 1hr. Take a small piece of the dough and roll it into flat disc . These are the bhaturas. Deep fry the Bhature in oil.

For channa, you require one and a half cups of chick peas, 3/4 cup chopped onions, 1 big tomato, 1/2 tea spn ginger-garlic paste, 1 green cardamom, 2-3 cloves, 1/2 tea spn coriander seeds, 1/2 tea spn cumin seeds, 1/4 tea spn fenugreek seeds(methi), 1/2 tea spn of rock salt, 3-4 black peppers, 1/2 tea spn chili powder, 1 tea spn oil or ghee, whichever suits you, few coriander leaves and salt. To save the trouble of finding so many spices, you could use a good chole masala pack off the shelf.

Now, soak chick peas in water overnight. Cook them. Cook the whole tomato (without chopping them) in water for 3-4 minutes. Blend them to form a smooth paste. Or use tomato puree instead. Dry roast all masalas and grind them in a mixer/grinder into fine powder. Heat the oil/ghee, fry onions and ginger-garlic paste. Stop once the onions start turning brownish in color. Add the tomato puree and the masala powder, chili powder and salt to the onions. Cook them for 5 minutes. Add the chick peas and cook for 5 mins. Channa is ready. Garnish it by sprinkling coriander leaves over it. Serve hot with Bhature.
