Chakli

Chakli is a marathi (regional language of Maharahtra) word for spiral shaped spicy pretzels also called Chakri, Murukku or Muruku, Gatti Pakodeelu in various parts of India.

This crunchy snack is a tea time snack as well as a dish for special occasions . Traditional chaklis are made with a special chakli making mold.They are made with spiced up rice and lentil flour dough, pressed using a mold into round/ spiral coils. The snack is often consumed on Deepavali, the Indian festival of light.

To prepare chakli, you need 4 cups rice, 2 cups bengal gram(Chana dal), 1 cup black gram (Udad dal), 1/2 cup coriander seeds, 1/4 cup cumin seeds, 1 teaspoon of ajwain, red chili powder, turmeric powder, asafoetida, salt and 1/2 a cup of ghee.

Roast the rice, black gram, bengal gram separately till the grains are crisp. Also roast coriander seeds and cumin seeds.Grind all these items till you get a fine powder. This will be used as the flour used to make the dish. Now heat some ghee or oil in a pan. Pour it over the flour and mix well. Add ajwain, salt to taste, turmeric powder, red chili powder and a cup of hot water into the flour. Knead the flour well and make a dough. Fill the chakli mold with the dough and press the piston of chakli mold and make chaklis. Heat oil in a pan and fry chaklis over medium heat. Chakli is ready when it stops bubbling in the oil. Let them cool in a paper cloth so that the excess oil is removed. Chakli is ready to be served. It is usually served with tea or coffee.
