Thandaai is a delicious drink made of cloves, milk, saffron, cardamom and almonds. The most widely known form of thandaai is the Bhang Thandai, an intoxicating drink containing cannabis extracts mixed with normal thandaai. It is very popular in India during the festival of holi.

Though bhaang thandai is very well known, the most popular is plain thandaai. Thandaai is derived from the word thanda meaning cool. As the name suggests, thandaai is a refreshing cool drink, very effective in beating the heat. It is mostly drunk in North India.

Thandaai is available in most of the restaurants, hotels, dhabas or roadside eateries. It can be very easily prepared at home too as it requires ingredients that are very easily available in kitchens, particularly Indian kitchens. To prepare thandaai you will require water, 2 tbsp fennel seeds , half tsp cardamom powder, 5 Cloves, half cup of raisins, half cup of finely chopped almonds, 1/4th cup each of finely chopped pistachios and melon seeds, 1/4th tsp of saffron for color and 1 liter milk.

Boil the water in a pan and add the fennel seeds, cardamom and cloves. Let the mixture stay still for ten minutes after you have removed from heat. Soak the raisins, almonds, pistachios and melon seeds in water for 1 hour. Grind the fennel seeds and the spices with water into a smooth paste. Set it over a strainer and extract the liquid spice water. Heat a little milk and add saffron to it. This will give a unique flavor and color to the drink. Mix the spice water,saffron mixed milk and the remaining milk. Thandaai is ready. Add crushed ice to thandaai and serve.
