Falooda

Falooda is an Indian refreshment drink made by using condensed milk, vermicelli,sugar and ice cream or Kulfi (as it is called in hindi).

Noodle like Falooda is basically Vermicelli made of corn starch and water. Falooda doesn't really have a flavor, but it adds to the look and is very good for digestion in a hot climate. Falooda is added with rabdi or sweetened condensed milk or kulfi, indian ice cream. It can be added with the essence of various flavors such as rose, mango, chocolate, fig, and many others. The most common flavor is rose.

Falooda is not very difficult to prepare. Falooda seeds or Takmaria Seeds are soaked in water for at least an hour. Next falooda sev or chinese noodles are boiled in water for about 15 minutes. When boiling is completed, the water is drained and the noodles are boiled in milk for about 5-10 min on low heat. After that the noodles are cooled. Now the prepared falooda is mixed with milk and rabdi and kulfi. Additional flavors such as rose syrup is added to enhance the taste.

Falooda is extremely popular throughout North India. It is available in almost all hotels, resturants as well as roadside stalls. It is a very popular dessert item too.
