Thalipeeth savoury pancake mixed grain flour

Thalipeeth is another type of Indian pancake from the western Indian state of Maharashtra. It is made of wheat flour, rice flour, vegetables, onions and jaggery. The dish is served with freshly prepared white butter.

Method of preparation of Thalipeeth is quite simple. You will require 1/2 cup each of wheat flour, rice flour, chickpea flour, and millet flour, 2 tbsp of sooji, 2 tbsp onion puree, 2 tbsp cilantro and 4 green chillies, both chopped and minced, 1 tsp cumin seeds, 1 tsp coriander powder, 1/2 tsp cumin powder, cooking oil and salt.

Mix all the ingredients together with some water to make a thick dough. The pan cakes are prepared by breaking of lumps of dough and patting them into disc shape with hands. As the dough tends to be very sticky, grease your hands with ghee or oil before handling the dough. Move the discs on a greased non stick pan and make pan cakes. Apply oil or ghee generously so that the pan cakes are evenly cooked. Serve with white butter or whipped yogurt.
