Sabudana Khichadi Vegetarian snack sago

Sabudana Khichadi is a dish prepared specially during the days of fasting. It can be had for snack as well but it is most commonly eaten during festivals such as navratras when cereals are not consumed by the fasting persons. Sabudana khichdi is made of tapioca or sago. Although it does not need any side dish to go with it, it is usually eaten with sweet curd.

Sabudana is very filling and not very difficult to prepare. It also has a good shelf life and can be prefect while travelling or outings. The khichdi can be had for breakfast or as a snack. Traditionally, it is eaten during the periods of fasting when people do not eat cereals or anaaj. It acts a great substitute for wheat or rice for the fasting persons.

To prepare sabudana khichdi, the ingredients needed are as follows.

1 cup sabudana or sago, 2 tbsp ground and roasted peanuts, 1/4 cup ghee or clarified butter, 2 chopped green chillies, 1 tsp cumin seeds, 1 tsp sugar, 2 tbsp grated coconut, salt.

Soak the sabudana overnight in just enough water to cover it completely. Heat a pan and add ghee to it. Put the chopped green chillies and cumin seeds in the ghee and fry till they are brown in color. Add sabudana, coconut and peanuts. Stir well and cook for 10 mins in medium heat or till the sago has cooked and become crisp. Now sprinkle some sugar and salt over the khichdi and mix well. Serve the dish with sweet yogurt.
