Puttu is a specialty of the Malyali cuisine, that is the cuisine of Kerala. It is by far the most loved breakfast dish in Kerala. Puttu is also hugely popular in Sri Lanka. The dish is cylindrical shaped steamed rice cake eaten with gravy dishes such as kadla curry.

Puttu is prepared with the help of a special device called the puttu maker. It is a cylindrical stainless steel device in which rice mix and grated coconut is stuffed and steam cooked. Puttu mix are commercially available nowadays, which make it very to make puttu by removing the problems of making the rice flour.

Ingredients for making puttu are rice 2 cups, grated coconut-1 cup and salt. The rice is to be soaked for 2 hrs. Afterwards, remove the water and allow it to dry. Now grind the rice into powder and add salt mixed water in it little by little so as to wet it. Make sure not to convert it into a dough. Take the puttu maker and stuff it with layers of rice flour and coconut alternately. Next, steam cook the puttu for five minutes. Serve hot.
