It is a made of wheat flour, water, salt and sometimes ajvain. The bread is made into small round discs and deep fried in oil. Puri is unique among Indian breads as it is puffed up like a ball when served. Puris are served directly from the pan as they might flatten after some time. The puris puff up due to the steam that collects between two layers of the bread. It is usually poked with a finger to release the steam and then eaten with a variety of dishes such as halwa(a sweet fudge like dish), curries or potato based dishes. A piece of puri is broken off and is used to collect the side dish and eaten. Puris come in various shapes and sizes. A regular puri is made of wheat flour and is about 10 to 12 cms in diameter. A type of puri called bhatura, is much bigger. It is usually eaten with chole, a spicy gram curry. Another version of puri called luchi is very popular in west bengal and orissa.
