Pohe Vegetarian snack flattened rice

Pohe is a snack from the cuisine of the western Indian state of Maharashtra. It is mostly eaten for breakfast, although its a great tea time snack too.

Pohe is a spicy snack made from flattened rice called Poha. Although poha can be prepared at home, it is a tedious job. Poha is mostly procured from the market, where it is very easily available. The poha is cooked with with chilies, onions, mustard seeds, cumin seeds and curry leaves. It is light yet filling, delicious and very easy to prepare. That is why it is a very popular breakfast item.

The recipe of pohe is as follows. You will require poha 2 cups, 1 tsp mustard seeds, 2 tbsp oil, kadi patta, one chopped onion, two green chilies, 2 chopped potatoes, peanuts salt, turmeric powder, lemon and coriander.

Wash the poha thoroughly in running water. Pour water in the bowl containing poha so that it is completely immersed in it. Now fry the mustard seeds, green chilies, curry leaves(kadi patta), onions, potatoes and peanuts in the cooking oil. Remove the water from the poha and put it in the frying mixture. Sprinkle some turmeric powder and mix it well. Now cover the lid of the pan and let it cook for 2-3 minutes making sure to stir it so that it does not stick to the bottom. When it is cooked, turn off the flame and pour some lime juice. Mix well. Garnish with coriander leaves and serve hot.
