<< Index Koshimbir salad salad side dishKoshimbir salad is a recipe from Maharashtra. The salad consists of chopped cucumber, onion and tomatoes tossed together with fine peanut powder. The salad is light and very good to taste. It is a common side dish in a typical Maharashtrian meal. The other versions of koshimbir may include grated carrot and even radish. Koshimbir is very easy to whip up. All you need is tomatoes, onion, peanuts, green chilies, coriander leaves, mustard seeds, asafoetida, curry leaves, salt and sugar to taste. Chop the onions and tomatoes and mix them in a bowl. Roast the peanuts on a pan and grind them into powder. Now mix the peanut powder with the rest of the salad evenly. Add salt to taste and a little sugar. Pour 1 tsp oil in a frying pan and let it heat. Now fry the mustard seeds, asafoetida powder and curry leaves. Pour the hot oil mixture directly into the salad and mix well. Top it off with chopped coriander leaves and serve along with the main course.
