Kombdi vade Chicken Curry with Bread Chicken

Kombdi vade is part of the malvani cuisine of western Indian state of Maharashtra. It is a non-vegetarian dish, comprising of vada and malvani chicken curry.

Vada are fried dumplings of wheat and lentils which are commonly eaten in maharashtra and south india. The chicken curry served along with it is the famous malvani chicken curry, a mouth watering chicken dish and a traditional recipe of the malvani cuisine. In addition, sol kadhi a drink made from coconut milk is served along with the chicken curry. The dish is garnished with chopped onions and lime juice.

The following is the recipe of kombdi vade.

The ingredients needed are 6 to 8 medium pieces of chicken, 4 chopped onions, 1 grated coconut, 2 tbsp each of cooking oil, garlic and ginger paste, garam masala and malvani masala, 6 chopped green chillies, 1 tsp red chilly powder, 1/2 tsp turmeric powder, salt and coriander leaves.

Take 3 green chillies and make a paste. Mix it with the ginger garlic paste. Use the paste to marinate the chicken pieces. Heat a little oil and cook the grounded coconut in it till brown. Now grind 2 onions and mix the coconut with them. Take the onions and fry them in oil till brown. Add the spices to the mixture and fry for some time. Next, move the chicken pieces into the mix and fry them till they are light brown. Mix the paste of coconut and onion and salt and add water. Let the chicken cook for half an hour. Afterwards, remove from fire and garnish with chopped onions and coriander leaves. Serve hot with vada and solkadi.
