<< Index Dum goshtDum gosht or Dum Ka Ghosht is a special dish from the exotic Mughlai cuisine of India and Pakistan. It is also a part of the Hyderabadi cuisine, the city of the famous ruler, Nizam. Mughlai cuisine has a large variety of exotic non-vegetarian dishes, Dum Ghosht being one of them. Dum ghosht biryani is a variation of the dish taken from the famous Hyderabadi cuisine. To make Dum Ka Ghosht, the following ingredients are required. Half kilo mutton, half cup whipped yogurt, 1/2 tsp garam masala, 1 tsp ginger, 1tsp garlic, 1 tsp red chilly powder, 1/2 tsp each of grounded poppy and sesame seeds, a small piece of nutmeg, grounded, 1/4 tsp coriander powder, 2 tbsp limon juice, 1/2 tsp cumin, 1 finely chopped onion, 1 tbsp of onion paste, finely chopped mint and coriander leaves, 4 cm piece of papaya, 4-5 grounded almonds and a piece of coal. Take all the spices, yogurt, lime juice, grounded seeds and nuts in a vessel and mix them. Apply this paste thus formed for the marination of the meat. Let it marinate for 2 to 3 hours. Over high flame, heat some cooking oil and fry the onions till brown. Now add the meat to it and cook it till it becomes tender and starts leaving the oil. Next, take a red hot piece of coal and wrap it in a aluminium foil. Pour one tbsp of ghee over it and place it inside the pan. Let the pan stand of 5 min. Now remove the coal and garnish with chopped onions, mint and coriander leaves. The dish is ready to serve. It is served with rumali roti or naan.
