This dish mainly originated in Kerala. Appam used to be called PAAL Appam in kerala in early days and was very popular dish there. Gradually people of different states were introduced to it and it became popular in other states as well. Nowadays, it is also known as Kerala Appam. The following recipe is a very common way to prepare Appam. To Make Appam you need these ingredients: First drain the soaked rice and grind it in the same grinder with coconut shavings and cooked rice. The result will look like thick paste. Do not put too much water. Now put the yeast in it and mix it slowly and properly.Let it stand for six hours till it gets fermented at room temperature. Take a non sticky pan. Now put half cup of batter in the pan and spread it in a way such that it forms a thick layer at the middle and thin one at sides. Now fry it till it becomes golden in color. Make sure to cover the pan with the lid for a few minutes. When it is ready, the center will become a bit spongy. Appam is ready to be served.
